2 cups sifted flour, 4 teaspoons sugar, 1 tablespoon baking powder, 3/4 teaspoon salt
2 eggs, well beaten, 1 1/2 cups milk, 1 1/2 cup finely copped apples.
Add sifted dry ingredients to egg mixture and stir unil only well blended.
Mix in 2 tablespoons melted shortening.
Heat griddle or skillet over low heat. Test griddle by dropping on it a few drops of cold water and if the drops dance around in small beads, the temperature. Lightly grease griddle. Pour batter from pitcher into small pools, leaving at leat 1 inch between the pancakes. Turn when they become puffy and full of bubbles. Turn only once. Sprinkle pancakes with brown sugar before serving.
