Veal Parmesan

1 pound thin veal cutlets

1 egg, beaten

1/2 cup bread crumbs

2 tablespoons shortening

1 can tomato sauce

1/4 cup water

1/4 cup onion, chopped

1 clove of garlic, minced

Dash of thyme

4 ounces chopped onion

Dash of thyme

4 ounces Mozzarella cheese, thinly sliced

1/4 to 1/2 cup Parmesan cheese

Dip cutlets into egg, then into bread crumbs. Brown in shortening. Add tomato sauce and water, add onion, garlic and thyme. Cook over low heat for 30 to 45 minutes or until tender, stirring occasionally. Top with Mozzarella slices; sprinkle with Parmesan. Broil until cheese melts. Makes 4 servings
