Veal Roll-Ups

1/2 clove of garlic

2/3 cup corn oil

1 large onion, chopped

3 cups soft bread crumbs

1/3 cup chopped parsley

4 tablespoons grated Parmesan cheese

1/2 cup lemon juice

1/4 cup water

Salt and pepper to taste

Cut veal into 3 inch squares. Pound flat. Brown onion in 2 tablespoons oil; add bread crumbs and cheese. Cook until barely bronw. Place stuffing in center of each square; roll up and secure with toothpick. Mix remaining oil, lemon juice and water. Pour over meat. Season with salt and pepper. Bake in preheated 350 degree oven for 30 minutes. Turn and bake 20 minutes longer. Makes 4 servings.
