Veal Scallopini

1 (1 pound) veal cutlet, 3/4 inch thick

1/4 cup tomato juice

1/2 cup onion rings

1/4 cup shortening

1/4 teaspoon salt

1/8 teaspoon pepper

2 (8 ounce) cans tomatoes with juice

1 small can mushrooms

Instructions

Cut veal into four servings. Marinate veal in tomato juice for 2 hours. SautÈ onion in shortening; remove from skillet. SautÈ veal until slightly browned. Do not use flour. Add salt, pepper, tomatoes, onion, and mushrooms. Cook for 1 hour or until meat is tender. Makes 4 servings.
