Veal Cacciatore
1 1/2 pound veal meat cut up into cubes
1 large onion, cut up
1/2 cup cooking oil
1 small can tomato sauce
2 small tender zucchini squash, peeled and cubed
2 tablespoons chicken broth
Salt and pepper to taste
Instructions
Brown veal and onion in cooking oil in a 4 to 5 quart saucepan. Add enough water to cover veal; cook for 20 minutes, adding water if necessary to keep meat covered. Add tomatoes and continue to cook. Add squash 30 minutes before meat is tender. Add chicken broth and seasonings with squash.
Makes 4 servings.
