Breast of Lamb and Potato Casserole
4 to 5 pound breast of lamb
2 cups water
Salt to taste
4 large potatoes
Flour
Instructions
Wash lamb; cut into two or three rib pieces. Pack into large pot. Add water and salt and bring boil. Reduce heat. Simmer covered for 2 hours 30 minutes to 3 hours. Remove from broth and place in shallow roasting pan. Boil potatoes in jackets; peel and slice into halves lengthwise. Dip into broth; arrange around meat. Salt and pepper meat and potatoes to taste. Bake, uncovered, at 425 degrees for 30 minutes or until brown. Thicken broth with flour for gravy.
Makes 4 servings.
