Beans and Lamb
1 1/2 pound lamb, cubed
salt and pepper to taste
1 medium onion, sliced
2 tablespoons butter, melted
2 pound uncooked, string beans
1 (8 ounce) cans tomato sauce
Instructions
Place lamb in 4-quart saucepan. Add salt and pepper. Brown lamb and onion in butter. Stem and wash beans thoroughly. Cut into 2-inch pieces. Add to lamb and onions. Cover; cook over low heat for 20 to 30 minutes or until beans wilt. Stir occasionally. Add tomato sauce, salt and pepper. Cover and simmer for 1 hour 30 minutes or until meat is tender. Serve with rice.
