Leg of Lamb with Currant Glaze
1 (6 pound) leg of lamb
1 clove garlic, slivered
8 to 10 medium potatoes
1 teaspoon salt
1/2 cup currant jelly
1 tablespoon vinegar
Instructions
Wash lamb and wipe with clean damp cloth, then cut small slits into meat and insert the pieces of garlic. Preheat oven to 300 degrees and bake for about three hours. Begin roasting at 300 degrees. About an hour before roast is done, place potatoes around the meat in pan. Sprinkle with salt. Baste potatoes with fat from the pan. About 15 minutes before serving, baste lamb with mixture of currant jelly and vinegar. Baste several times.
