Liver with Vegetables

1 1/2 pound liver, sliced 1/2 inch thick

1/4 cup flour

salt and pepper to taste

3 tablespoons shortening

2 cups thinly sliced carrots

1 cup diced onions

1 medium green pepper, diced

1/4 cup water

Cut liver into serving-sized pieces. Combine flour, 1 1/2 teaspoonfuls pepper; dredge liver in seasoned flour. Brown in shortening. Pour off drippings. Arrange vegetables on browned liver. Season vegetables with salt and pepper; add water. Cover tightly and simmer for 35 to 40 minutes or until done. Makes 6 servings.
