1 1/2 pound liver 2 tablespoons minced onion 2 quart bread crumbs 1 tablespoon butter 2 eggs, beaten 1/2 cup flour salt and pepper to taste beef broth
Instructions
Cook liver for 5 minutes; put liver through meat chopper. Fry onions and bread crumbs in butter. Mix liver with eggs; add onions and bread crumbs, season to taste. Stir in flour. Drop by spoonfuls into kettle of hot beef broth. Cook, covered for 30 minutes, shaking frequently, to prevent sticking.
