Liver Dumplings

1 1/2 pound liver

2 tablespoons minced onion

2 quart bread crumbs

1 tablespoon butter

2 eggs, beaten

1/2 cup flour

salt and pepper to taste

beef broth

Instructions

Cook liver for 5 minutes; put liver through meat chopper. Fry onions and bread crumbs in butter. Mix liver with eggs; add onions and bread crumbs, season to taste. Stir in flour. Drop by spoonfuls into kettle of hot beef broth. Cook, covered for 30 minutes, shaking frequently, to prevent sticking. Makes 6 servings.
