Baked Apples and Ribs
4 pounds spareribs strips
2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground allspice
1/4 cup cinnamon apple jelly
3 medium baking apples, cut into 1/2-inch wedges
2 tablespoons brown sugar
1/2 teaspoon ground allspice
3 cups apple cider
Instructions
Place 1 strip spareribs meaty side down on rack in large roasting pan. Mix salt, pepper and 1/2 teaspoon allspice; sprinkle half the mixture on spareribs in pan. Layer apples on spareribs; sprinkle with brown sugar. Place remaining strip spareribs meaty side up on apples. Stir 1/2 teaspoon allspice into cider; pour onto spareribs. Sprinkle with remaining salt mixture. Cover and bake in 350 degrees oven 2 hours. Uncover and bake until spareribs are tender, about 1/2 hour, basting with cider 2 or 3 times during the baking period. Melt jelly over low heat; brush on spareribs.
Yield: 4 servings.
