2 pound spareribs 1 pound white beans 2 quarts water 2 onions 1 celery stalk, chopped 1 green pepper, chopped 1 clove garlic, crushed 1 teaspoon paprika 2 teaspoons salt 2 cups tomatoes
Cover beans with hot water and allow to soak for 20 minutes. Meanwhile, cut spareribs and brown well. Add 2 quarts of water. Drain beans and add to spareribs; boil until tender. Fry onions, celery, peppers and garlic; add paprika, salt and tomatoes and cook 10 minutes. Pour in pot and cook everything together for 10 to 15 minutes longer. Total cooking time is about 2 1/2 hours.
