Sausage and Black-Eyed Pea Dish

1/2 pound bulk pork sausage

2 cups water

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon dry mustard

2 (10 ounce) pkgs. frozen black-eyed peas

Instructions

Brown sausage in a large skillet; drain. Add water and seasoning and bring to a boil. Add peas and return to a boil. Cover, reduce heat and simmer 40 to 45 minutes. A Southern tradition is to eat black-eyed peas on New Years day to bring luck. This dish is a great way to celebrate this tradition. Makes 6 to 8 servings.
