Macaroni and Wieners
2 tablespoons butter or margarine
1/4 cup onion, chopped
1 tablespoon flour
1 tablespoon brown sugar
1 1/4 cup tomato juice
2 tablespoons catsup
1 tablespoon lemon juice
1 teaspoon prepared mustard
4 ounces elbow macaroni, cooked and drained
8 wieners
2 ounces sliced American cheese, cut into strips 1 1/4 inches long
Instructions
Melt margarine in saucepan; add onion and brown lightly. Stir in flour and brown sugar; add tomato juice, catsup, lemon juice and mustard. Cook until thickened, stirring constantly. Reduce heat and simmer for 10 minutes. Grease 8 by 8 glass casserole dish and spread macaroni in bottom of baking dish. Pour 1 cup of sauce over macaroni and mix lightly. Make three diagonal slices in wieners and fill with strips of cheese. Arronage on top of macaroni mixture and bake in 350 degree oven for 15 minutes. Pour remaining sauce over top of wieners and bake 10 minutes longer.
Makes 4 servings.
