Tuna Chowder
2 tablespoon salad oil
1 small onion, minced
1 (28 ounce) can tomatoes in puree
1 (16 ounce) pkg. frozen mixed vegetables
1/2 teaspoon dried basil
1/2 teaspoon sugar
2 (7 ounce) cans tuna
Instructions
In 4-quart saucepan over medium heat, in hot salad oil, cook onion until transparent but not brown. Add next 4 ingredients and 1 1/2 cups water; heat to boiling. Over low heat, cover and simmer 10 minutes. Add drained tuna; cook 5 minutes or until vegetables and tuna are hot.
Makes 6 servings.
