Tuna Croquettes with Broiled Pineapple Slices

1/4 cup onion, chopped

2 tablespoons butter

2 tablespoons flour

1/2 milk

1 (7 ounce) can tuna, drained

2 cups rice, cooked

1 egg, slightly beaten

1/2 cup shredded sharp American cheese

1/2 teaspoon salt

Dash of pepper

1 cup bread crumbs

1/3 cup fat

Instructions

Cook onion in butter until tender; blend in flour. Add milk; cook stirring until thickened and bubbly. Add tuna, rice, egg, cheese, salt and pepper. Chill for several hours. Shape into ten patties; roll in bread crumbs. Brown in hot fat for 4 to 5 minutes on each side.

Broiled pineapple slices: 2 tablespoons lemon juice 2 tablespoons brown sugar 1 tablespoon melted butter 10 slices pineapple Combine all ingredients except for pineapple; brush on pineapple. Broil for 3 to 4 minutes. Serve tuna croquettes on broiled pineapple slices. Makes 4 servings.
