Pineapple Bavarian Cream

1 tbsp unflavored gelatin

2 tbsp cold water

1/4 cup sugar

1 1/4 cups evaporated milk

2 tbsp lemon juice

1 1/4 cups crushed pineapple, drained

Pour evaporated milk and lemon juice in ice tray to chill thoroughly. Mix gelatin, sugar and water in top of double boiler. Line molds or serving dish with thinly sliced cake or ladyfingers. Pour chilled milk (it should be very cold) into a large mixer bowl and beat on high speed for 3 minutes. Gradually add the melted gelatin and sugar mixture, beating for two minutes. Mixture should form peaks. Add drained pineapple and mix on low speed for one minute. Pour into cake lined molds and chill.
