1/4 cup butter
4 cups thinly sliced onion
4 10-oz cans of condensed beef bouillon, undiluted or beef consomme
1 tsp salt
4-6 slices of French bread, 1" thick
freshly grated Parmesan cheese
Saute onion in butter in large skillet until golden. Combine onion, bouillon or consomme, and salt in a medium saucepan and bring to a boil. Reduce heat and simmer, covered, for 30 minutes.
Toast bread slices in broiler until browned on both sides. Sprinkle each slice with Parmesan cheese then place under broiler for about a minute, or until cheese is bubbly.
Pour soup into individual serving bowls. Float the toast, cheese side up, on top of the soup.
