Herring in Dill Sauce
1 cup mustard
1 cup olive oil
1/4 cup vinegar
3 tablespoons lemon juice
1/2 cup chopped fresh dill
1 tsp pepper
1 1/2 tsp salt
1 1/2 tsp whole allspice
2 tablespoons sugar
8 salt herring fillets
Fresh dill springs
Instructions
Combine mustard and oil in a small bowl. Beat with a mixer until as thick as mayonnaise. Gradually beat in the vinegar and lemon juice, then add dill, pepper, salt, allspice and sugar. Rinse the herring fillets and drain well on paper towels. Place the herring into a large bowl and cover with the sauce. Refrigerate, covered, for 3 days. Garnish will dill sprigs and serve as the first course.
