Scrambled Eggs in Toast Cups

4 slices of bread

2 tbsp butter or margarine, melted

4 eggs

1/4 cup milk

1/4 tsp salt

dash pepper

Preheat oven to 350 F. Trim crusts off the bread. Brush both sides of bread slices with melted butter. Press a slice into each of 4 6-oz custard cups. Place on a cookie sheet, bake 15-20 minutes, or until bread is toasted. Meanwhile, in a small bowl whisk by hand or with an electric mixer beat the eggs with milk, salt and pepper until well combined. Heat butter in a medium skillet and pour egg mixture into skillet. Cook slowly until eggs start to set. Then stir constantly until eggs are soft and fluffy. Fill toast cups with scrambled eggs. For a fun topping, sprinkle on crumbled, cooked bacon or chopped parsley.
