Hamburger Soup
3 tbsp butter or margarine
1 1/2 lbs ground beef
1 12-oz can tomatoes
2 10-oz cans beef consomme
1 10-oz can condensed onion soup
4 carrots, peeled and sliced 1/4" thick
1/4 cup chopped celery tops
1/4 cup chopped parsley
1/2 tsp Italian seasoning
10 whole black peppercorns
Instructions
Melt butter in stock pot. Add beef and cook until browned. Drain off excess fat. Add remaining ingredients along with 2 cups of water and bring to a boil. Reduce heat and simmer, covered, 45 minutes, stirring occasionally.
