New England Clam Chowder
2 bacon slices, diced
1/2 cup chopped onion
1 cup cubed, peeled potato
1 1/2 tsp salt
dash pepper
3 7-oz cans minced clams
2 cups milk
2 tbsp butter or margarine
8 soda crackers, crushed
Instructions
In a soup pot, saute bacon until almost crisp. Add onion and cook until tender, about 5 minutes. Add potatoes, salt, pepper and 1 1/2 cups water. Cook 10 minutes. Add clams and liquid, milk and butter, cook 3 minutes. Sprinkle in crackers and heat through, do not boil. Serve hot.
