Cream of Broccoli Soup
3 cans (15 oz) vegetable or chicken broth
1 1/2 lbs broccoli florets, about 9 cups
1 small onion, chopped
2 cloves garlic, minced
1 1/3 cups dry milk powder
1/2 cup water
1/4 cup flour
1/4 tsp salt
1/4 tsp pepper
Instructions
Place broth in medium saucepan and bring to a boil. Add broccoli, onion and garlic and bring to a boil again. Reduce heat to low, cover and cook for 5-7 minutes or until broccoli is tender. Separate mixture in two. Place one half in the blender and blend until desired consistency. Return blended mixture to the remaining half of the broth mixture in the saucepan. Combine dry milk powder, water, flour, salt and pepper and whisk until well combined. Stir the flour mixture into the soup and bring to a gentle boil over medium heat. Remove from heat and serve.
