Pork Stir Fry
2 tbsp olive or canola oil
1 lb boneless pork chops, cut into strips
1/2 cup water
1/2 cup barbecue sauce
2 tbsp soy sauce
2 cups frozen or fresh vegetables for stir fry
Instructions
Heat oil on medium high in a large skillet or wok. Add pork and stir fry for 4 minutes or until no longer pink. Remove pork and keep warm. Add another tablespoon of oil to the pan and stir fry vegetables for 4-5 minutes. Add water, barbecue sauce and sauce sauce, stir to combine. Add pork and stir to combine. Heat through and serve over rice.
