Swiss Cakes

1 pkg yellow cake mix

1 egg


1/2 cup butter, softened

1 1/2 cups sifted powdered sugar

1 egg yolk

2 tbsp light rum or cognac


4 1-oz squares unsweetened chocolate

1/4 cup butter

1/4 cup sifted powdered sugar

2 tbsp currant jelly (optional)

Preheat oven to 350 F. Grease and flower an 8x8 baking pan. Prepare cake batter as box directs using 1 egg and the amount of water specified on the package. Pour batter into prepared pan and bake 25-30 minutes, or until surface springs back when touched lightly with finger. Cool in pan ten minutes. Remove from pan and cool on wire rack completely. To make the filling: In small bowl with mixer at medium speed, cream the butter until light and fluffy. Gradually beat in the sugar, beating mixture until very light and fluffy. Add egg yolk and rum and beat until smooth and well combined. To make the glaze: Melt chocolate and butter together in a double boiler (or in glass bowl placed over a simmering pot of water) and let cool. Add sugar, stirring until smooth. Split the cooled cake in half crosswise to make two layers. If desired, spread currant jelly on bottom layer. Spread with filling and put the two layers together. Spread the glaze evenly over the top of the cake and refrigerate until firm. Cut with a sharp knife to serve.
