Preheat oven to 400 F. Make cake as package directs, using the 2 eggs and the amount of water specified on package. Fill each cone with 3 tablespoons of batter. Place cookie sheet in oven, then place cones on cookie sheet; bake 15 to 18 minutes, or until cake springs back when touched. Let cool on wire rack.
Top each cone with a scoop of ice cream. Top some with coconut and the rest with chocolate sprinkles.
