Different Bean Soup
2 1/4 cups navy beans
2 quarts water
1 1/2 lbs. smoked ham steak (or shoulder or hocks)
1 cup onion, chopped
1 cup celery, chopped
1/4 tsp pepper
1 tsp nutmeg
1 tsp oregano
1 tsp basil
1 tsp salt
Instructions
Soak beans in a pot of water overnight. Drain. Combine beans, 2 quarts of fresh water, and ham in a large kettle. Simmer, covered, for 1 1/2 hours. Remove one cup of beans and mash well. Remove ham and cut into pieces. Return ham and beans to kettle. Stir in remaining ingredients. Simmer 30-45 minutes or until beans are tender.
