Vegetable Bread

1 cup carrots

1 cup canned peas

1 potato

1 quart tomato juice

1 cup green beans

1 onion

3 sprigs parsley

2 yeast cakes

1/2 cup shortening

1/4 cup sugar

3 tablespoons salt

12 1/2 cups flour, approximately

Instructions

Cook vegtables togeather until tendar. Force vegtables through a sieve. There should be 1 1/2 quarts juice and pulp. Dissolve yeast in 1 cup lukewarm water. Add yeast to vegtable pulp and add sugar, salt and shortening. Add 5 cups flour and stir until well blended. Let batter work until light and full of bubbles (about 1 hour) Add remaining flour and let rise until double bulk. Knead and shape into loaves. Rub each loaf with melted butter; let rise again until double in bulk. Bake at 350 for 45-50 mins. Makes 4 loaves.
