Peach Batter Pudding
2 T sugar
1 tsp salt
3 tsp baking powder
1 1/2 cup flour
1 cup sweet milk
2 T melted butter
1 cup of white or brown sugar
quartered peaches, enough to HALF fill the bottom of a pan
Instructions
Half fill a shallow pan with peaches quartered and placed with the round
side down.


Dot with butter and pour over them a cup of either white or brown sugar;
white for daintiness, brown for a thick caramel syrup. Sift dry ingredients together, add the milk and butter and stir lightly
together. Pour it over the peaches. Set in a moderate oven (350°) and bake one hour.


If the crust forms and browns before an hour is up test as usual and
remove from oven if the batter is done.


Serve with plain or whipped cream.
