Peach and Brown Sugar Muffins
4 cups flour
2/3 cup brown sugar
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1/4 tsp. allspice ( I also added some cinnamon)
2 cups sour cream
2 eggs
1/2 cup oil
1 cups chopped peaches, fresh or canned (if using canned, use the 15-
oz. size....just the right amount)
Instructions
Stir together flour, sugar, baking powder, baking soda, salt and allspice. In a separate bowl combine sour cream, eggs and oil. Stir in the peaches. Add to flour mixture. Stir just until moistened. Spoon batter into baper lined muffin tins about 2/3 full. Bake at 400 for 20-25 minutes.
Makes 20 muffins.
