Edamame Hummus with Vegetables

2 cups frozen shelled edamame (baby soybeans)

1 clove garlic

1/3 cup tahini (sesame seed paste)

3 tbs lemon juice

1 tsp salt

1/4 tsp ground cumin

6 tbs water

2 tbs olive oil

Place edamame in glass bowl, cover with plastic wrap. (Microwave 3 min.) on high. Place edamame and garlic in food processor, process until pureed. Add tahini, lemon juice, salt and cumin. Process until smooth. With motor running, drizzle in water and oil until absorbed. (Serve immediately) or cover and refrigerate up to a week. Drizzle with additional oil, if desired. Serve with---Assorted cut Vegetables.

Makes 2 cups
