Grilled Cube Steaks with Fries

2/3 cup oil

1 tbs minced garlic

1 1/4 tsp ground cumin

1/2 tsp salt

1/4 tsp pepper

2 tbs red wine or cider vinegar

4 cube steaks, halved

1 1/2 pounds potatoes, cut in slices

1 red bell pepper, halved lengthwise

2 cubanelle peppers, halved lengthwise

Grilled Cube Steaks with Fries


Whisk oil, garlic, cumin, salt and pepper in a bowl until blended. Remove 4 tbs to ziptop bag. Add vinegar and steaks (marinate 15 min.) at room temp or refrigerate 2 hours. Pour remaining oil mixture into another ziptop bag. Add potato slices and pepper halves. Shake to coat with marinade, (refrigerate 1 hour). Preheat outdoor grill or stove top grill pan. Remove peppers and potatoes from bag, saving marinade. Grill potatoes 18 min. turning once. Grill peppers 8 min. turning once. Slice peppers into strips, toss with reserved marinade. Remove steaks from bag, discard steak marinade. Grill steaks 3 min. turning once. Spoon peppers on top of steaks. Serve with potato planks.


I was actually quite surprised at how good these really were. Cube steak is a tough cut to cook and I usually end up making chicken fried steak with it, but this marinade (I marinated mine for a couple hours) was really delicious and the meat was plenty tender. The potatoes were delicious too!
