Pepper Crusted Roast

2 cloves garlic, peeled, minced

1 tbs peppercorn melange, crushed

1 tbs salt

1 tsp fennel seeds, crushed

1 tsp ground cumin

1/2 tsp dry mustard

1/4 cup oil

3 3/4 pounds eye round beef

1 tbs chopped parsley

2 tsp chopped rosemary

1 cup chicken broth

1 large onion, sliced

Pepper Crusted Roast


Heat grill. In bowl, combine garlic, peppercorn, salt, seeds, cumin, mustard and oil until blended. Rub 1/2 mixture over beef. Cover and refrigerate 1 hour. Add parsley and rosemary to remaining spice mixture. Grill beef until seared on all sides. Place beef on rack set in roasting pan. Add broth and onions to pan. Place pan on grill. Cover grill and cook 45 min. Reduce grill heat. Cook 1 hour more or until desired doneness. Brushing with spice mixture during last 10 min. of grilling. Let sit 10 min. before slicing, then serve.


This was very good, but I braised mine instead of cooking it on the grill. Because of that mine wasn't really crusted, but the flavor was still good :)
