Enchilada Casserole

12 corn tortillas cut in half

Vegetable oil for frying

2 (10oz each) cans Old El Paso enchilada sauce

1 pound lean ground beef

1 (1oz) package Old El Paso Original Taco seasoning mix

1/2 cup water

1 (15oz) can black beans, rinsed and drained

1/2 cup chopped white onion

3 cups shredded sharp cheddar cheese

2 cups shredded jalapeno jack cheese (OR Monterey Jack cheese)

Mexican Queso fresco or Cotija cheese for garnish on top

Chopped green onion and cilantro for garnish on top

Instructions

Heat oven 350º In a heavy skillet heat enough vegetable oil for frying tortillas. Place one cut tortilla at a time in hot oil for about 15 seconds; remove to paper towels to drain. In a large skillet brown ground beef until no longer pink; drain excess fat and then return to pan with 1/2 cup water and Taco seasoning mix. Cook until water is absorbed. In a 13x9-inch baking dish, layer: 1 can enchilada sauce - 1/2 of the tortillas - Ground beef - Black beans - Chopped onion - Cheddar and jalapeno jack cheese (reserve 2 cups for top) - 1/2 of the tortillas- 1 can enchilada sauce About 2 cups of the reserved shredded cheese Bake uncovered about 40 minutes until cheese is melted and lightly browned on top. Sprinkle with Queso fresco and then garnish with chopped green onion and cilantro.
