Chocolate Chip Mini-Muffins
1/2 cup sugar
1/4 cup shortening
1 egg
1/2 cup milk
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2/3 cup miniature semisweet chocolate chips
Instructions
In a large bowl, cream sugar and shortening until fluffy. Add egg, milk and vanilla; mix well. Combine dry ingredients. Gradually add to creamed mixture; mix well. Fold in chocolate chips. Spoon about 1 tablespoon of batter into each greased or paper-lined
mini-muffin cup. Bake at 375° for 10-13 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield: about 3 dozen.
