Frugal Hamburger Soup

1/2 lb ground beef
1 small onion, diced
1 clove garlic, minced
1 rib celery, diced
1 can diced tomatoes
2 cans chicken broth
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 tsp pepper
salt to taste
1 bay leaf
1 cup cooked rice
1/2 cup each frozen corn and peas
Instructions
In a Dutch oven, brown ground beef until no longer pink. Drain. Add onion, garlic, and celery, saute until soft.Add tomatoes, broth, oregano, thyme, salt, pepper and bay leaf. Bering to a boil, them simmer covered 30 minutes. Add cooked rice, frozen corn and peas, cook through.
