2 eggs 1 cup sugar 1 cup flour 1 pinch salt 1 level teaspoon baking powder 3/8 cup boiling water lemon extract to suit taste. |

| Instructions |
| Beat yolks until thickened, add sugar gradually, add hot water, sift in salt, baking powder and flour. Fold in stiffly beaten whites and lemon extract. Bake in a moderate oven in ungreased tin, and when done turn upside down until cool.
