Instructions
Brown chicken pieces in 2 tablespoons oil. Remove chicken. Add 2 tablespoons flour to make light brown roux. Saute following vegetables in roux until wilted: 1/2 c. celery 1/2 c. bell pepper Chopped fresh parsley Add to this 2 cups fresh tomatoes, quartered, plus juice, 16 oz. can tomato sauce, 1 package frozen whole okra and bring to a boil. Add chicken and simmer 1 hour or put in crockpot for 3 hours..
